Old Witch's Magic Nut Cake
As with all witchy cooking, the emphasis is on making with magic and in the right state of mind, ever measuring, every pour into a bowl and every stir should encapsulate magic in its purest energy.
Why not hold the tin in your hands and imbue even further before placing in the oven to cook too.
Ingredients required:
3 eggs
450g can pumpkin puree
175ml of vegetable oil
120ml of water
315g all-purpose flour
250g sugar
1½ tsp baking soda
1¼ tsp salt
¾ tsp nutmeg
¾ tsp cinnamon
140g golden raisins
140g chopped walnuts
Instructions
Preheat oven to 180 degrees C. Lightly oil two loaf pans and set aside.
Beat together wet ingredients in a bowl. In a second bowl, mix together dry ingredients. Combine the two mixtures, then mix in raisins and nuts.
Pour batter into loaf pans, and bake for an hour to an hour and fifteen minutes. Cake is done when a toothpick inserted in the center comes out clean.
Let loaves cool for 15-20 minutes in the pans, then remove and finish cooling on a rack.
If desired, top with your favorite cream cheese frosting and additional chopped walnuts.
You can make a drizzle topping and scatter with finer chopped walnuts if you choose to.
